Rainbow Cake Recipe!

Hi guys!

A lot of you have requested my rainbow cake recipe so I created my own recipe for the cake I made that I could share with you guys!



For the cake:
350g self raising flour
350g soft soft butter
350g caster or light brown caster sugar
6 large free range eggs
1 tablespoon vanilla extract
no more than 40ml semi-skimmed milk

Frosting/Icing:

- icing sugar
- water

You also need:
- 6 different colours, I used: Red, Blue, Yellow, Pink, Green and Orange
- smarties
- ready to roll fondant icing/ self made fondant icing

1) Pre-heat your oven to 360 degrees/gas mark 4.
2) Mix your cake ingredients like for any other cake  - beat the butter and sugar together first then add the eggs followed by everything else. To make my cake soft I mix the flour in using a balloon whisk.
3) Separate the batter into 6 different bowls.
4) Add a few drops of colouring into the bowl and mix until you get the right colour. Repeat this for all the colour.
5) Spread a very thin layer of cake batter into the baking tray. It is very important that this layer is thin otherwise the cake will be too tall. Put the cake into the oven and checked after 10 minutes and every 5 minutes after that because the cake will be cooked really quickly as it is very thin. Don't worry if the cake seems sticky at the top as this may be due to the food colouring added. 
6) Repeat step 5 with the other cake batters.

Decoration:
1) Once the cakes have cooled down take each layer of cake and put them on top of each other. Between each layer a layer of icing or whipped if you prefer that. To make the icing use as much as you need of the icing sugar and add a few drops of water until you get the right consistency. It really is trial and improvement.
2) Roll some self made fondant icing or ready to roll fondant icing from the supermarket. 
3) Place the fondant icing on top of the cake and cute around the edges. 
4) To further decorate the cake I used smarties and stuck them on the cake using the left over frosting.
